KHASTA KACHORI
Khasta kachori is a deep fried stuffed puffed pastry. Usually stuffed with spicy moong dal stuffing. Its outer layer is very crispy and flaky. It is one of the favourite snacks of indian.
Kachoris are pronounced differently in diffrent places like kachodi , kachoudis , kachouri.
Kachoris can also be served with diffrent toppings in form of a chat.
It is really tasty and full of flavours and very easy to prepare at home exactly like the one you buy from a halwaai.
Today i'm sharing a moong daal khasta kachori recipe.

Ingredients :
For stuffing
Moong daal
(soaked and semi crushed) - 1/2 cup
Besan - 2 + 1/2 tbs
Salt - to taste
Cumin crushed - 1/4 tbs
Fennel crushed - 1/2 tbs
Coriander seeds crushed - 1 tbs
Kasoori methi - 1 tbs
Black salt - 1/4 tsp
Red chilly - 1 tbs
Sugar - 1/2 tbs
Garam masala - 1/2 tsp
Black Pepper - 1/2 tsp
Amchoor - 1/2 tbs
Green chilly and ginger crushed - 1 tbs
Oil - 3 tbs
Oil - for deep frying
For dough
All purpose flour - 1 cup
Oil - 1/8 cup
Salt - to taste
Water (luke warm) - as required
Method :
1) To make dough add flour , salt and oil and knead dough by adding water as required to make soft dough ( chapti consistency)
2) Keep the dough aside to rest for about half hour
3) To prepare stuffing add oil in a pan and add cumin , coriander and fennel. Fry for a minute.
4) Add green chilly and ginger paste also add kasoori methi and fry for another minute.
5) Add red chilly, black salt, amchoor, salt and garam masala.
6) Add besan and cook for 3-4 min. Stirring continually till besan is cooked.
7) add crushed moong daal and , also add sugar and fry the mix till it becomes dry.
8) take the small portion of dough and stuff the moong daal stuffing and fry it in oil till it becomes golden brown.
