Ghevar recipe



                              Ghevar

Ghevar is rajasthani sweet tradionally associated with the teej festival. It is disc-shaped sweet cake made with all purpouse flour soaked in sugar syrup.
There are many varieties of ghevar including plain, mawa and malai ghevar. 

Ingredients :

Maida / all purpose flourr   1 cup
Ghee                                         ¼   cup    
Milk                                          ¼  cup
Sugar syrup                            1 cup
Besan                                       2 tsp
Water (ice cold)                     1 cup
Yellow color                           1 tsp

For garnish
Almonds flakes
Cardamom
Pistachio

Method :
1) In a bowl add maida , besan , milk , water and mix well until smooth consistency (make lumps free batter)

2) Add ghee and mix well.

3) Add yellow food color.

4) Heat the oil/ghee in a frying pan. Put a round ring mould in frying pan. Add the batter slowly slowly in batches , in the centre of the mould(approx.. half cup batter for one medium size ghevar) Fry until golden brown.

5) Let the ghevar to cool down to room temp.

6) Pour the sugar syrup and garnish with almond flakes , cardamom and pistachio.

Note :    maintain the temp. of oil while frying.
               Be carefull while adding the batter in oil because  it will splash out
